Lentil Salad

3 cloves garlic
1 large onion
2 T. oil
1 1/2 c. lentils
3 cups chicken stock
1 lb. knackwurst

Dressing
10-12 sprigs of fresh thyme
1 bunch fresh chives
1/4 c. cider vinegar
2 T Dijon mustard
1 t mustard powder
2/3 c. oil

Make a garni of parsley, thyme, and 1 bay leaf. This will soak in the lentils while cooking to be removed later. Saute onion and crushed garlic. Add stock and lentils. Simmer until tender (about 30 minutes) Add dressing and sausage or knackwurst.
